By the time of the war against Chile, there were many anonymous heroes -many of them from Huancayo. The Captain Enrique Rosado stands out due to his dedication and courage. When he was captured by the invading troops and sentenced to death penalty by execution, he asked the priest of Huancayo, Jose Maria Francisco Ruiz, to listen to his confession.
After his confession, he told the priest that he would like to recall his mother with a stew because it was the best dish that she prepared. The priest asked Leandra Torres - a woman who lived near the Main Square - to prepare such dish. In this way the good soldier recalled his mother the last day of his life.
One of the principal ingredients of this delicious dish of Huancayo is the Andean tuber called Arracacha (Araccia Xanthoorhiza). The Incas used to cook it as a purée and give it to their babies as the first solid food.
For that reason when people eat stew, they recall the great love that mothers feel for their children. Perhaps this is why it is eaten in the most important moments in life and during festivities. |
